Sujihiki & slicing knives
Sujihiki knives are long Japanese slicers with a narrow, thin blade for slicing raw and cooked meats, a Japanese version of the western slicers. Sujihikis can be seen as a double bevel version of the Yanagiba knives, and their size usually ranges from 24 cm to 30 cm in most of the cases.
